I wanted something different tomorrow morning so I figured I’d prep some muffins. My brother has been sticking to his diet and is rewarding himself before his summer job starts by ordering a pizza and laying in bed all day tomorrow. So I needed something fun.
I ran again today after I got retaped at therapy. I did two miles at home and then did some interval work at the gym. My knee feels fine and my hip is sore but not as bad. I’m starting to regain range of motion and flexibility in my hip. I have therapy this week and next week then I am done!
Ok, back to muffins.
Blueberry (yes) Espresso (yes) Chocolate (yes) Protein (more yes) Muffins
Makes 5 small muffins (1 serving for a meal)
1 large egg
3 tbsp ground flax
1 tsp unsweetened cocoa powder
1 tsp almond butter
1 tsp ground espresso beans
1 scoop PlantFusion unflavored or chocolate protein
1/2 cup blueberries
Preheat oven to 350. Blend all ingredients except blueberries. When the batter is mixed, fold in the blueberries. Pour mixture into muffin tins. I use the muffin paper things (do they have a name? I don’t bake often) and I still spray them with an olive oil spray to keep from sticking. Bake for 15-20 minutes. Done!
So damn good.
